has its own identity
We have been cultivating in Italy for over six years, in our greenhouses, 16 varieties of edible flowers, available in 40 colors and intended for the Italian and foreign market.
Guaranteed Italian supply chain: from cultivation to processing.
Our edible flowers are a quality food: an edible ingredient and guaranteed through the exclusive use of products suitable for human consumption, and by a suitable screening of every single stage of growth and processing stage.
To facilitate harvesting, the flowers are grown “soilless” on a covered area of 30,000 square meters, in bins of untreated substrate soil and even if the cultivation follows the organic production model, they cannot be awarded certification because the legislation Italian only provides for cultivation on the ground. Annual production is constant and is guaranteed by protected cultivation: the greenhouses are in fact heated in winter and shaded during the hottest periods of summer.
Harvesting takes place manually every day to respect the flower in its growth stages and to preserve it in its complete integrity.
After harvesting, the fresh flowers are placed directly inside patented trays that allow them to be kept for over 10 days at a temperature between 4°C and 8 °C and allow the organoleptic characteristics of the flower to be maintained.
To obtain the dehydrated product, on the other hand, the fresh flower undergoes a further step: the transformation thanks to the use of a patented Swiss machine that dehydrates the flowers below 30 ° C to maintain the color and shape of the product itself. The process lasts about 36 hours after which a product with a moisture residue of 2-3% is obtained.
The fresh product is shipped a few hours after harvesting to the main Italian fruit and vegetable markets, to some large-scale retail chains and operators in the Ho.Re.Ca. world through the online shop www.mettiunfiore.it where you can also buy the dehydrated product.
