INGREDIENTS FOR 12 CUPCAKES
Butter 120 g
Flour 00 120 g
Sugar 120 g
Eggs (about 3 medium) 165 g
1 “DOLCE MIX”
Vanilla essence 1 tsp
Baking powder for desserts 2 g
Salt up to 1 pinch
PREPARATION
Bring butter and eggs to room temperature. Then pour the softened butter into a bowl, add the sugar and vanilla essence (alternatively use lemon zest). Operate the whisk at medium-high speed and let the mixture whip up slightly. After a few minutes add the eggs a little at a time, continuing to work with the whisk as soon as they are incorporated. In this way you can add the flour and baking powder. Mix well with a spatula, adding the “DOLCE MIX” and the dough is ready.
Fill 12 paper cups placed in a muffin tray by the spoonful with about 40 g of batter. Before baking, slam the pan several times on the work surface, in this way you will accurately level the surface and you will get puffy cupcakes but with a flat surface. Bake in a hot oven at 180° for about 25 minutes. Once cooked, let them cool to room temperature before garnishing them.
